Tokusen is a Japanese matcha, a powdered green tea that is not steeped in the usual way but whisked. The tea is bright, dense and rich, with umami notes and a subtle, refined bitterness. It works well both for traditional whisking and for matcha lattes.
Characteristics
- Type: matcha, powdered green tea
- Country: Japan
- Grade: Tokusen
- Taste: dense, rich, umami with a subtle bitterness
Why You'll Love It
Its bright color, thick foam and rich flavor make this matcha versatile: it can be enjoyed on its own or added to milk-based drinks. Gently energizing, it suits the morning and the working day.
How to Brew
Traditional:
- light tea "usucha": 1.5–2 g of powder per 75 ml of water; strong tea "koicha": about 4 g per 50 ml
- water at 60–80 °C
- put the powder in a bowl (chawan), pour over the water and whisk with a bamboo whisk (chasen) for 20–30 s until a smooth, thick foam forms
- drink right away, before the powder settles
Without special tools, a large cup and an ordinary whisk will do.
Matcha latte:
- sift 1 tsp of powder into a bowl through a sieve to remove lumps
- pour over hot water (about 80 °C) and whisk with a whisk or milk frother for 2–3 min
- add warmed frothed milk (dairy, almond or coconut, to taste)
Storage
Store in a tightly closed jar in a cool, dark place, away from light, moisture and odors.
