Gaba Qing Xin "Green Cherry" (台北绿樱, Táiběi lǜ yīng) is a Taiwanese oolong that has undergone GABA processing: during part of production the leaves are kept in a nitrogen-rich environment without oxygen. This technique gives the tea softness, a light tartness and characteristic notes of baked fruit.
The tea is made from the Qing Xin (青心, Qīng Xīn) cultivar, one of the most widespread and prized in Taiwan, known for its delicate floral aroma and smooth texture. The tea comes from Hsinchu County (新竹), although the name mentions Taipei, the island's capital. The name "Green Cherry" hints at the freshness and the berry-fruity shade of the flavor.
